This recipe dates back to Rennaisance Florence when salt was subject to heavy taxes. The Tuscans decided that they could do without it in their bread, preferring instead to reserve this precious commodity for preserving their olives and prosciutto. This bread is therefore very low in salt and particularly suited to richly flavoured fillings. Ingredients : organic white flour, organic wheatmeal flour, water, raisin sour dough leaven, sea salt. Mini Opens are dainty and delightful little open sandwiches that are simply divine as a light lunch or board meeting, 3 per serve. Pane Toscana is also available sliced and toasted for breakfast
